Cleavers
The home cook, or restaurant which prepares its own meat, will require a meat cleaver. They are large, rectangular knives used for cutting meat. The cleaver blade is about 15 cm (6 inches) long, very heavy, with a thick spine, enabling the cleaver to easily chop through thorough bone and joints. Most good quality cleavers have a hole in the end to allow them to be easily stored on a rack.
