The Japanese kitchen knives that have attracted so many accolades. The blades utilise CROMOVA 18 stainless steel and are ice tempered and hardened to Rockwell C56° - 58° which holds a razor sharp edge longer than any other steel and resists rust, stains and corrosion.
CROMOVA refers to the 3 key elements added to the steel - Chromium for added stain and rust resistance; Molybdenum and Vanadium for extra hardness and superior edge retention. This special formula of steel results in an incredibly sharp, robust and long lasting knife.
One thing to be aware of is that Global knives should not be sharpened with a traditional 'steel'. For best results a whetstone should be used. MinoSharp also produce a manual ceramic sharpener specifically for Global knives, and this will also give very good results with very little effort. If you do want to use a steel, a ceramic or diamond coated one must be used.

Global knives, made in Japan, are an extensive modern range of the highest quality and extraordinary sharpness.
The first Global knives were designed in 1985 by Komin Yamada whose remit was to develop a range of knives which was truly new and revolutionary, harnessing the best materials available and the most modern design concepts. With an almost unlimited budget he was to fashion a series of kitchen knives which would appeal to the professional and amateur chef alike, be comfortable and easy to handle, and meet their most demanding requirements.
Global knives are extremely well made, the steel used is among the hardest in knife manufacture, even harder than high quality forged steel knives. A Global knife will last you a life time and will mantain its sharpness much longer than cheaper knives. They are designed to stand rigourous use. Futhermore most Global knives have hollow handles, making them lighter than you may think, and are extremely well balanced.
Please note that Global knives should not be sharpened using a conventional metal sharpening steel. Ideally a whetstone should be used, but MinoSharp also make a manual ceramic sharpener specifically for Global knives which gives very good results. If you do prefer to use a 'steel', a ceramic or diamond coated one must be used.
