Miyabi 5000 S is a series that merges Japanese design with western easy-care attitudes. Made of ZWILLING J.A. HENCKELS Special Formula steel and FRIODUR ice hardened to approximately 57 Rockwell, these knives are sharp, shaped to meet Japanese culinary needs and fit perfectly with western maintenance practices. They also look magnificent. Chutoh (Medium Knife) - also called a Large Petty Knife - a double bevel edged knife used when a Shotoh is too small and a Gyutoh is tooo large. Also used as a small slicer.
