Miyabi 5000S 17cm Deba Knife
Traditionally manufactured Japanese knives are exceptionally sharp and require special attention to keep them performing at their peak. Miyabi 5000 S is a series that merges Japanese design with western easy-care attitudes. Made of ZWILLING J.A. HENCKELS Special Formula steel and FRIODUR ice hardened to approximately 57 Rockwell, these knives are sharp, shaped to meet Japanese culinary needs and fit perfectly with western maintenance practices. They also look magnificent.
Deba (Protruding Blade) - a right handed single bevel edged knife with a thicker blade and less acute angle for a stronger edge. Traditionally used for cutting and filleting fish, but also used for boning meat or as a chopper. The angle of the bevel helps to automatically adjust the knife to the proper position for removing fish from the bones.
