Miyabi 5000 S is a series that merges Japanese design with western easy-care attitudes. Made of ZWILLING J.A. HENCKELS Special Formula steel and FRIODUR ice hardened to approximately 57 Rockwell, these knives are sharp, shaped to meet Japanese culinary needs and fit perfectly with western maintenance practices. They also look magnificent. Usuba (Thin Edge) - a right handed single bevel edged knife. The large, wide blade with an extremely fine edge is perfect for the most delicate of slicing jobs with super fine cuts. Often mistaken for a Nakiri knife, the difference is that a Nakiri knife has a double bevel edge.
